Spinach and Cheese Stuffed Shells

This recipe is by far one of my families favorites. The recipe is freezer-friendly if you want to double up the ingredients and have some for another meal!

I am not a fan of cooking most of the time, so I am always looking for a quick, simple meal that does not require a lot of ingredients. This meal can be made for a family or shared for two and save some leftovers. YUM!

I made this recipe a little bit healthier than you would normally find online. I used non-fat or part-skim ingredients in this recipe but you can use whatever types of cheese you'd like. I do suggest buying the chopped frozen spinach because you can get more spinach in every bite, but that's what I prefer.

Spinach and Cheese Stuffed Shells

Prep Time: 30 min

Cook Time: 20 min

Total Time: 50 min

Serves: up to 8


1/2 bag of frozen spinach

1 box of jumbo shells

15oz part-skim ricotta cheese

1 1/2 cups cottage cheese

1 1/2 cups grated part-skim mozzarella

1/2 grated parmesan cheese

1/2 tsp salt

1/2 tsp pepper (I put a few pepper shakes)

25 oz marinara


1. Bring a large pot of water to boil with a splash of olive oil. It prevents the noddles from sticking. Cook the shells according to the package. DO NOT overcook because the shells will fall apart when filling. They should hold their form.

2. Defrost your desired amount of spinach.

3. Drain your noddles and allow time to cool.

4. In a large bowl, mix together ricotta, cottage cheese, mozzarella, parmesan, salt, pepper.

5. Drain the spinach, then add to mixture.

6. Pour some sauce on the bottom of a pyrex so shells do not stick. Preheat oven to 350 degrees F

7. Using a spoon, fill your shells with your desired amount of mix. My mix did not end up filling all of my shells. Evenly place shells in casserole dish.

8. Lightly sauce the top of shells, sprinkle on some more cheese if you'd like, cover dish with foil, then bake for 20 minutes.

*The last 5 minutes, uncover your dish to allow the cheese to melt more*
